To sum it up simply, Gluten is a protein found in wheat which may cause inflammation and digestive upset. When these carbohydrates are refined (like in white bread) they have a high glycemic index which can stimulate inflammation. Wheat specifically found in the U.S has been so genetically modified it isn’t even a distant cousin to its original self. To keep it brief that’s another story for another blog….
Gluten free products have come a long way and you can find them most anywhere now. This makes it much harder to weed out the not so healthy ones though. I try to skim the ingredient list and look for things made from brown rice or nuts, avoiding products made from corn and sugars. Ultimately is it best to stay away from store bought processed food which will most always contain added salts and sugars used as preservatives. Not to mention the preservatives we cannot even pronounce. So making your own bread is your healthiest option and it’s not even difficult. Really I swear it’s not.
I was given and read the book The Stash Plan, by Laura Prepon and Elizabeth Troy. I highly recommend it if you are looking for more information on GMOs and clean living. Her recipe for gluten free bread is so easy and tastes amazing. I cannot wait to customize some sweet and savory versions next time. Oh and it was also husband approved. He asked me to make it every week. I added some almonds to the top of mine and some extra honey.
