Craving Coconut Pancakes
Gluten & Dairy Free
These pancakes are guilt free and still fulfill ever bit of your pancake craving. They will keep you full throughout your morning to power through the beginning of your day. Oh and they are so easy.
Yields: 6 medium sized pancakes.
- 1/4 cup coconut flour
- 1 TBSP coconut sugar
- 1 tsp salt
- 1 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 cup almond milk ( any dairy free milk will do, I like cashew as a substitute and would love to hear about any others you try)
- 4 eggs
- 3 TBSP coconut oil (in liquid state)
- 1/2 tsp vanilla extract

Blend your dry ingredients in a medium sized mixing bowl. Set aside.
Melt coconut oil until liquified. Whisk eggs and milk in separate mixing bowl. Whisk the coconut oil into your other wet ingredients along with vanilla extract.
Blend wet and dry ingredients together until smooth and free of any lumps. At this point you can add any other flavoring or ingredients you would like to customize your pancakes with. Blueberries and cocoa nibs are some of my favorites.
Warm a greased skillet over medium heat. I use more coconut oil, you may use butter or an oil of your choice. Scoop about 3 pancakes onto your skillet (Depending on the size of your pancakes). I use a ladle for his part. Wait about 2 minutes before flipping your pancakes and then let cook on opposite side for about a minute.
Top wth your favorite toppings and enjoy! I used organic honey and organic strawberries. This is TRULY a TASTY Breakfast.
